LEFTOVER rotisserie chicken + veggie soup
(This is SUCH an easy recipe, and a great way to use leftovers for a micronutrient packed, cozy soup!)
Rotisserie chicken (you can throw whatever is left on the bone in the pot!)
1 box chicken bone broth
Whatever vegetables fresh or frozen you have on hand!
Some ideas: Corn, carrots, celery, onion, lima beans, green beans, diced potato, etc.
Salt, pepper, thyme, chicken boullion cube to taste!
Directions
Pour chicken bone broth into a pot. Add in rotisserie chicken and bring to simmer.
Strain the broth then add the shredded chicken from rotisserie back into the pot.
Throw in your vegetables of choice and add seasonings.
Bring to a simmer and ENJOY!
